Astrid’s Picks: Seven Yummy Recipes Made with Thanksgiving Leftovers

The big Thanksgiving meal has come and gone but there’s probably still a lot of food left!  If you don’t want to eat repeat Thanksgiving dinner every night of the week you have to get a little creative to use up all those leftovers.  Here are seven recipes whose ingredients include Thanksgiving dinner staples to inspire you.

Sweet Potato Pancakes

Sweet potato casserole is a perennial favorite on many Thanksgiving tables.  This recipe turns a beloved side dish into a beloved breakfast in no time.  Maple syrup will go well with the sweet potato flavor, but if you want to put a breakfast spin on sweet potato casserole consider serving with a dollop of marshmallow fluff on top (or for those with less of a sweet tooth just whipped cream.  You’ll still get a vanilla flavor without all the sugar).

Turkey Stock

Even after all the meat from your turkey is gone, you can still use the leftover carcass to make stock.  Once you have stock the opportunities are endless.  There are so many different types of soups and stews you can make if you have a supply of stock at your disposal.  Any recipe that calls for chicken stock or broth you can use turkey stock in.  If you don’t think you’ll use it fast enough you can even freeze it for use months later.

Thanksgiving Burrito

While traditional burritos have rice as their main filling, this Thanksgiving take uses leftover stuffing.  The great thing about burritos is that you can toss pretty much whatever you want in them, as long as you can still roll it up for closing.  This burrito lets you get the whole flavor of Thanksgiving dinner in each bite.

Pulled Turkey with Cranberry BBQ Sauce

If you’re getting tired of standard turkey sandwiches, consider shredding what meat you have left to make pulled turkey.  Cranberry sauce BBQ sauce keeps the Thanksgiving vibes going while making it different enough that you don’t feel like you’re eating the same thing over and over again.

Thanksgiving Leftovers Egg Rolls

Similar to the burrito, but on a smaller scale, these egg rolls wrap your Thanksgiving favorites into one bite.  Since they’re smaller in size these are a great option when you’re getting down to the end of your leftovers since they don’t use as much of the ingredients.

Pumpkin and Ice Cream Sandwiches

It’s hard to believe that some people actually end up with leftover dessert, but if you find yourself with just too much pumpkin pie left, these fun little ice cream sandwiches are a yummy way to remix a classic Thanksgiving dessert.  While we haven’t tested it you could likely substitute other pie fillings for the pumpkin as well.

Cranberry Sauce Cheesecake Brownies

Unless everyone in your family really loves cranberry sauce, you probably have a fair amount of cranberry sauce leftover.  This recipe uses the tartness of cranberries to counter the richness of cheesecake and brownies to create a delectable dessert.
